Hi guys! This is my version of keto gnocchi or ricotta dumplings.
I wrote this recipe from a mixture of different recipes I found and tweeked it to my liking. I hope you enjoy! 😘 check out @ketotreato and look at my highlights to watch me prepare them.
Ingredients:
500g of deli ricotta (tub ricotta is okay but more runny)
100g of almond meal
100g of grated parmesan
1 chopped onion
250g Canned tomatoes (Home made is better if you have time)
Small handful of green beans (optional)
500g of mince beef
Salt and pepper

Method:
Step 1: Start by making your ricotta dumpling mixture. Mix in your ricotta, almond meal and grated parmesan. If the mixture is too runny to roll into balls, add a small amount of psyllium husk to thicken. Season to taste.
Step 2. Roll mixture into small balls (think similar size to gnocchi or a small dumpling. And place onto a big plate. Put in fridge to set while you prepare your sauce.
Step 3. Chop onion finely and heat oil in a fry pan (preferably olive oil or coconut oil) cook onion until brown and then add mince meat.
Step 4. Once mince is cooked add canned tomatoes (or homemade tomato in sauce) and a third of the can worth of water. Add in green beans or any other vegies of your choice. Season to taste. Once stirred in, simmer while you prepare your dumplings.
Step 5. Heat a small amount of oil in a fry pan, softly put a small amount of dumplings in (you don’t want them to connect so leave plenty of space between each one) and squish a little with a fork. Cook on a medium heat and very gently flip with a spatula or spoon.
Step 6. Once cooked put on a big plate too cool a little (this helps them keep their shape) and turn heat off bolognese sauce.
Step 7. ENJOY 😊
