Fluffy ricotta pancakes

My easy fluffy ricotta pancake recipe:

Pancakes:
250g of ricotta
1/2 cup of almond meal
4 eggs (whites and yolks separated)
Pinch of salt
Stevia to taste
I also added some psilium husk as I’m trying to eat more fibre so  it’s optional.

Sauce:
Frozen berries (blackberries, raspberries and blueberrys are best)
Water
Stevia/monkfruit sweetner

Method:
Step1: Mix in ricotta, almond meal, egg yolk, salt, stevia and psilium husk (optional).

Step2: wisk the egg whites. Soft peaks is better but I didn’t have an electric wisk to I just did what I could with a hand wisk. Once ready mix in with the rest of the mix

Step3. Heat some butter in a pan and make small sized pancakes. (Ricotta pancakes break more easily  so I find smaller is easier to flip)

Step4: to make berry sauce, heat berries, sweetner and water in a saucepan until boiled, squish down any large berries and bring to boil again. Serve on top of pancakes with cream and fresh berries.
